Price is the same for all sizes up to 8′ diameter
The thicker the cover, the stronger. The primary reason to have a thicker cover is to have it be stronger, either for an anticipated heavy load (snow, dogs etc), or due to a larger tub with a longer span.
Most of the thermal insulation is due to the first inch of foam and having a nice fit with the rim of the tub
